Hailing from the Scottish village of Tweedbank, Sam Moore’s 16-year career has spanned many cities. From humble beginnings honing his craft in the busy restaurants of Sydney and Melbourne, to prestigious hotels, and Two Hats, Sam has some serious notches on his culinary belt.


“From as far back as I can remember, I have always been surrounded by good food! I look for creative inspiration wherever I can find it, and I’m motivated by a great guest experience,” he said.


Growing up in kitchens with his father, who is also a chef, Sam’s passion for food began at a very young age, combined with numerous opportunities to work amongst some of Europe’s best chefs.


“Although I’m predominantly influenced by European cooking, I love experimenting with modern techniques, and using different utensils such as smoking guns, liquid nitrogen and sous vide methods,” he said.


Sam is a stickler for consistency and using only the best quality produce, making him the perfect addition to the team here at Orpheus Island.
