Dishes include butter-poached Moreton Bay bugs with vanilla crème fraiche, granny smith and celeriac, roast duck breast with beetroot, date and port jam, blood orange and coffee crumb, and Mexican dark chocolate crémeux with mango sorbet, passionfruit curd and toasted coconut.
